EINKORN FLOUR

EINKORN FLOUR

Milled from Milky Way Einkorn grown at Weatherbury Farm

Sold out until Fall 2026 after our 2026 harvest.  2025 crop failure because of rain, thistles and weeds.  The perils of organic farming.

Einkorn is the grain that started western civilization. It was harvested by hunter gatherers as long as 30,000 years ago and domesticated in Turkey ~ 8650 BC.

Hearty nutty complex flavor. Use in almost any dish from breads and rolls to cookies & cakes to pancakes & pasta.

Stone Ground Organic Whole Einkorn  Flour — Ground in one pass and sifted through a very coarse sieve so that any very large pieces of bran and hulls remaining are removed (most of the hulls are removed in a two-step separate dehulling operation). Its weak gluten, makes einkorn easier to digest. This flour is not bleached.

2lbs ($9.84)*; 5lbs ($18.93)*; 20lbs ($69.22); 25lbs ($81.44); 50lbs ($156.62)**

Stone Ground Organic Sifted Einkorn  Flour — Milled to order from Milky Way Einkorn grown at Weatherbury Farm.  Approximately 85% extraction.   Its weak gluten, makes einkorn easier to digest.

Prized for its nutty flavor, we've found that cookies made with it can be addictive..

Storing Weatherbury Farm Products

Flours, Rolled Products & Berries:
Weatherbury flours, rolled products or berries are real food and insects find them tasty.

They should be stored in the refrigerator.  If you will not be using immediately, keep in the freezer, especially in warm weather.

We have had reports from customers that even after two years they still work and taste great. We wouldn’t, however, recommend storing them that long.

Although there are organic pesticides, we do not use them, either on the grains in the field or the products we mill.

If you store the flours, rolled products or berries in a tightly lidded bucket,  you will open your bucket and find  bugs slipping into what you thought was an impenetrable space.  If you have been storing organic flours, milled products & berries in a lidded bucket and there are no bugs, then an organic pesticide has been used.

Beans:
Keep the beans in a cool, dark, dry place.  Dry beans will, over time, take longer to cook (but they still have great flavor).
