APPALACHIAN BREAD FLOUR

(milled from Appalachian Hard White Winter Wheat)

Appalachian Bread Flour has a white color and a milder flavor than Weatherbury’s Bread Flour (milled from Maxine).

Use in pizza crusts, white bread (both pan & sourdough), dinner rolls, sandwich breads,  brioche, and baguettes where a lighter colored bread is desired.

Stone Ground Organic Appalachian Whole  Bread Flour — Whiter stone ground bread flour with a milder flavor; only the coarsest bran has been removed.  Ground in one pass and sifted through a very coarse sieve so that any very large pieces of bran are removed. Coarser than sifted Appalachian Bread flour.  This flour is not bleached.

Stone Ground Organic Appalachian Sifted Bread Flour — Whiter stone ground bread flour with a milder flavor. The germ is still in the flour; there are some small pieces of bran. Contains the grain’s natural flavor & is not artificially bleached.

Storing Weatherbury Farm Products

Weatherbury Flours are real food and insects find them tasty.

Although there are organic pesticides, we do not use them, either on the grains in the field or the products we mill.  Therefore the flour, rolled products or berries should be stored in the refrigerator.  If you will not be using immediately, keep in the freezer, especially in warm weather.

We have had reports from customers that even after two years they still work and taste great. We wouldn’t, however, recommend storing them that long.

Otherwise even if you store them in a tightly lidded bucket,  you will open your bucket and find  bugs slipping into what you thought was an impenetrable space.  If you have been using organic flours, milled products & berries and there are no bugs, then an organic pesticide has been used.

Keep the beans in a cool, dark, dry place.  Dry beans will, over time, take longer to cook (but they still have great flavor).
