Spelt is one of the three ancient hulled wheats. Oberkulmer, an old Swiss landrace, is a pure spelt with no modern wheat genetics.
Prized for its superior nutrition, Weatherbury’s Oberkulmer spelt has a lovely nutty flavor. Use in breads, rolls, cookies, cakes, pizza crusts, pasta, pancakes, and scones.
New for January 2025: 45lb bag of whole spelt flour or 45lb bag of sifted spelt flour for shipping. Great price and ships in smaller UPS box. Less expensive to ship and, hopefully, UPS will break fewer bags.
Stone Ground Organic Whole Spelt Flour — Ground in one pass and sifted through a very coarse sieve so that any very large pieces of bran and hulls remaining are removed (most of the hulls are removed in a separate dehulling operation). Many people with wheat issues find that they can tolerate spelt. This flour is not bleached.

Stone Ground Organic Sifted Spelt Flour — Ground in multiple passes and sifted through a fine sieve. Approximately 85% extraction.  Prized for its nutty flavor, we’ve found that cookies made with it can be addictive.

Weatherbury Flours are real food and insects find them tasty.
Although there are organic pesticides, we do not use them, either on the grains in the field or the products we mill. Therefore the flour, rolled products or berries should be stored in the refrigerator. If you will not be using immediately, keep in the freezer, especially in warm weather.
We have had reports from customers that even after two years they still work and taste great. We wouldn’t, however, recommend storing them that long.
Otherwise even if you store them in a tightly lidded bucket, you will open your bucket and find bugs slipping into what you thought was an impenetrable space. If you have been using organic flours, milled products & berries and there are no bugs, then an organic pesticide has been used.
Keep the beans in a cool, dark, dry place. Dry beans will, over time, take longer to cook (but they still have great flavor).
