Milled from Wapsie Valley Open Pollinated Corn, c.1850 grown at Weatherbury Farm
We are sold out of cornmeal until our 2025 harvest (late fall) as deer ate our 2024 crop.
Weatherbury’s open pollinated Wapsie Valley Corn packs both a visual and a flavor punch. Milling at a low temperature maintains the nutrients & flavor of the grain.
And as to taste — cornbread made with Weatherbury’s pastry flour and cornmeal placed at the county fair 9 out of the past 10 years, winning 4 First place awards and 3 Second place award and 2 Third place awards.
Stone Ground Organic Open Pollinated Cornmeal — More finely ground than polenta. Yellow with some red flecks. Milled at a low temperature, it maintains the nutrients and flavor of the organic open pollinated non-GMO corn.
Used in bread, muffins, cakes , pancakes, johnny cakes, hush puppies, dressing, stuffing, spoon pudding.

Please note, while corn has no gluten, Weatherbury’s Cornmeal is processed in our mill, where we also process grains with gluten. While there is a vigorous cleanout between types of grain, some wheat flour could remain. Thus, it cannot be considered gluten free.

Weatherbury Flours are real food and insects find them tasty.
Although there are organic pesticides, we do not use them, either on the grains in the field or the products we mill. Therefore the flour, rolled products or berries should be stored in the refrigerator. If you will not be using immediately, keep in the freezer, especially in warm weather.
We have had reports from customers that even after two years they still work and taste great. We wouldn’t, however, recommend storing them that long.
Otherwise even if you store them in a tightly lidded bucket, you will open your bucket and find bugs slipping into what you thought was an impenetrable space. If you have been using organic flours, milled products & berries and there are no bugs, then an organic pesticide has been used.
Keep the beans in a cool, dark, dry place. Dry beans will, over time, take longer to cook (but they still have great flavor).

Mail Orders are due by November 3. 2025 with payment due by November 5, 2025. Orders will ship the week of November 17, 2025.
Smaller bags are sent via USPS. A box holds:
1. 3 five pound bags or
2. 6 two pound bags or
3. 2 five pound bags and 2 two pound bags or
4. 1 five pound bag and four two pound bags .
Larger bags are sent via UPS.
